A Bite to Remember

Kara Korhonen, a mom of one, a practicing dietitian, and a friend of The Baby Planners has a fabulous DVD out called Nutrition During Pregnancy. Using humor and cooking demonstrations, she answers all of your pre-natal food questions and so much more. This guide to “nutrition by trimester” will make eating during pregnancy a nutritious and oh-so delicious experience. Here’s just a sample for those of you in your third trimester:

Blueberry Crisp
Makes 6 servings

For the bottom:
1 16-oz. bag frozen blueberries
1 T granulated sugar
1 T whole wheat flour

For the top:
1/2 cup oats
1/4 cup packed brown sugar
1/4 cup whole wheat flour
2 T ground flax seeds
1/2 tsp ground cinnamon
3 T butter

Defrost blueberries in a microwave-safe bowl. Do not drain the thawed blueberries. Add sugar and flour to the berries and mix until equally distributed. In a separate bowl, mix your topping ingredients–oats, brown sugar, flour, ground flax seeds, and cinnamon. Once well blended, cut in the butter.

Nutritional Information per serving: 187 calories, 7g fat, 4g saturated fat, .5g omega-3 fatty acids, 29g carbohydrate, 2.3g fiber, 3g protein, 331 IU vitamin A, 1mg vitamin C, 11mcg folate, 32mg calcium, 1.77mg iron, 50mg sodium, .52mg zinc.

 

Bringing Home Baby

Sure, it’s nice to bring baby home to a fully designed, fully stocked, and fully fabulous nursery. But we find that with our clients, between unexpected bed rest, premature delivery’s and the uncertainty of adoption, “fully” anything is seldom the reality.

We always say, you don’t need much to bring home baby. A car seat, a place to sleep, diapers and a few layette items will get you started. The Show is based on Tracey’s fabulous book 101 Questions for Expectant Parents as well as her experience as a Family Communication Specialist.
